With the birth of Grand Hyatt's new poolside restaurant last March, alfresco dining has reached a whole new level of modern dining. Oasis Bar & Restaurant has become an ideal getaway from the hustle and bustle of city life despite being situated in the heart of Orchard Road . As there is no standard dress-code, visitors are more than welcome to flip-flop their way down the wooden platform of Oasis, with their sun-hats still on.
The Vibe As the elevator doors close behind you, lush greenery beckons as peace and tranquility envelopes one's soul almost immediately. To make up for its lack of air-conditioning, Oasis Bar & Restaurant enchants with its naturalistic ambience with rattan chairs from Spain and a theatre-kitchen constructed on granite stone set against wooden furnishings and wall decorations. The restaurant's safari setting is further enhanced by baskets of tropical exotic fruits displayed along the bar counter.
The Food The main feature of Oasis is the barbecue dinner which is available from Thursday to Saturday. Priced at $75+++ per person, the buffet dinner offers a variety of grilled meats, seafood, salad, Asian delights as well as free flow beer, wines and soft drinks. Light eaters may instead consider the ala carte menu items.
To keep Singapore 's tropical heat at bay, order the restaurant's home-made lemonade. Ice-cold fizzy lemonade with a sour pang, it will revitalize the senses after a long day. The salad selection was just right – there were not too many varieties to pry attention away from the main grill, yet enough to create an impression and satisfy initial hunger pangs.
Highlights of the salad selection include the Country Potato Salad with Boiled Egg and Seafood Salad with Artichokes and Lemon Vinegrette. The Country Potato Salad was a simple recipe of boiled potatoes topped with salt, pepper, mayonnaise and onions as dressing. The use of basic ingredients only serves to further emphasize each individual ingredient's taste, with each cube of potato crumbling and leaving a buttery sensation in one's mouth. The Seafood Salad was just as delightful, consisting of fat prawns and thick scallops that were springy and fresh.
The Seafood Platter consisting of grilled salmon, jumbo squids, king prawns and Morton Bay Bugs (also known as the Australian breed of crayfish) spells heaven to seafood lovers. Marinated with only salt, pepper and olive oil, the prawns and squid were springy and succulent, though a little charred.
The Meat Platter features beef ribs, chicken steak, lamb chop, chicken sausage and beef hotdog. Here, grilled meat is best eaten with Oasis' home-made mint sauce which tastes almost like honey with a dash of mint. Topping the ranks of this platter would be the beef ribs, show-casing tender strips of meat with each slice of the knife. Doused with Oasis' home-made barbecue sauce, it was a sweet, salty and tangy experience rolled into one. This meat dish definitely warrants a second helping or more.
The other Asian dishes include a menu of fried rice, fried kway teow, broccoli, and corn, all of which are enticing alternatives to the grilled items. Of course, combining all these selections would mean the best of both worlds for the adventurous or indecisive diner.
The Service Dressed in white khaki shirt, shorts and sneakers, waiters at Oasis retain their professional and attentive service level. Fresh cold towels appear almost immediately upon request and iced drinks are continuously topped up to ensure thirst is kept away in the hot weather. Diners are ensured a relaxing and easy evening ahead with such prompt services.
SD Food Advisor's take on Oasis Bar & Restaurant: It is refreshing to discover quality barbecue buffet in Singapore given the rarity of such cuisine throughout the island. Not only does Oasis dish out quality food, it packages its meal with an ambience hardly found in Singapore . However, such relaxing and laid-back alfresco dining coupled together with good food and free flow wine and beer comes at hefty price of $75+++ per person. Nevertheless, it is worth it for what Oasis promises. However, dining in the midst of barbecue smoke, as well when humidity is high, can prove to be unpleasant. On a separate note, Oasis provides a breakfast all-day menu, perfect for the pancakes-craving one has after a long hard night of partying.
